Nick Katona is the heart behind Savarin Culinary. A lifelong student of the kitchen, Nick’s journey began in the Midwest — immersed in the region’s bounty and tradition of honest, hearty food.
With over 20 years of experience in the culinary industry, Nick has led kitchens, built food programs, and now focuses his work on private chef services and culinary business consulting.
He believes food is more than fuel — it’s a powerful connector. Whether it’s through a plated course or a strategic kitchen plan, Nick’s mission is to nourish and inspire.
Why Savarin Culinary

Jean Anthelme Brillat-Savarin (1755–1826) was a French lawyer, magistrate, and politician who became one of the most influential gastronomes in history. Born in France, he trained in law but maintained a deep interest in food, science, and culture.
He is best known for his seminal work, Physiologie du Goût (The Physiology of Taste), published in 1825. This philosophical and witty meditation on food, taste, and pleasure is still echoed today.
Regarded as the “father of gastronomic literature,” his most famous quote — “Tell me what you eat, and I will tell you what you are” — remains at the core of our culinary philosophy.
